Paradies Lagardère is seeking a Regional Chef to lead culinary operations across airport platforms, ensuring top food quality, cost control, and consistent execution. You will provide hands-on support for back-of-house operations, openings, and training while ensuring compliance with brand, food-safety, and airport requirements.

The role reports to the Senior Director of Culinary and requires seven years of culinary leadership, ServSafe certification, and up to 50% travel.

Qualificações

• Bachelor's degree preferred; equivalent combination of education and leadership experience will be considered.
• ServSafe certification is required.
• 7+ years of culinary leadership experience in high-volume restaurant operations.
• Willingness to travel up to 50% to assigned airport locations.
• Position based at Paradies Lagardère Service Center or ATL airport when not traveling.

Responsabilidades

• Lead culinary operations across airport platforms to ensure quality, cost control, and performance improvement.
• Develop and implement menu updates, recipe testing and documentation.
• Audit HACCP, sanitation, and regulatory compliance in partnership with Food Safety.
• Support openings and RFP presentations for full-service, QSRs, coffee shops, and markets.
• Collaborate with Purchasing to select products meeting quality, availability, specs and pricing.
• Establish and monitor line-check procedures and product specification control.
• Monitor food-cost variances and implement corrective actions with platform leaders.
• Coordinate with Sr. Directors on proprietary-brand development and training.
