Job summary

Champion Foods LLC is seeking a Laboratory/Production Quality Technician to monitor production lines and ensure product quality, safety, and GMP compliance. You will document data for crust and toppings, verify dough temperature, and ensure metal detector results are recorded accurately.

In the lab, you will perform baking tests, parameter evaluations, texture analysis, and microbiology sampling, while calibrating essential equipment daily and maintaining a clean work environment.

Qualifications

• High school diploma or GED required.
• Experience in food manufacturing and/or laboratory environment preferred.
• Good oral and written communication skills.
• Ability to comprehend basic mathematical concepts such as fractions, ratios, temperature tolerances, multiplication and addition.

Responsibilities

• Monitor production procedures to ensure quality, safety and legal standards are met.
• Document data for assigned product lines (crust, topping, USDA).
• Check dough temperature and record with the dough mixer.
• Verify metal detector operation and recording by the packer.
• Oversee end-of-production-line weight and correct shipper labeling.
• Conduct laboratory evaluations including baking tests, parameter checks, and texture analysis; record findings.
• Calibrate thermometer, scales and pH meter daily.
• Perform microbiology testing and collect swab samples (APC, ATC, Yeast and mold).
• Keep lab and test bake areas clean.
• Assist manager with other duties as required.
• Environmental monitoring of pathogens/surface swabs.

Your Mission:

Under general supervision and according to established policies and procedures, monitors all of the production procedures and parameters to ensure that established quality, safety and legal standards of food products are maintained.

What You'll Do:

• - Checks and documents specific data corresponding to assigned product line (crust, topping, USDA.)
• - Examines dough temperature for accuracy and ensures that it is recorded by the dough mixer.
• - Checks and documents that the metal detector is correct and recorded by the packer.
• - Monitors the end of the production line to ensure finished product weight and proper identification is printed on product shippers.
• - Conducts product evaluations in the laboratory. These include: baking test and specification parameter evaluations, as well as texture analysis. Records findings on evaluation form.
• - Calibrates thermometer, scales and pH meter daily.
• - Perform microbiology testing for site. Collect swab samples (APC, ATC, Yeast and mold)
• - Keeps lab and test bake areas clean
• - Perform other duties as required by manager
• - Environmental monitoring pathogens/surface swabs.

What You'll Bring:

• - High School Diploma or GED.
• - Knowledge of Good Manufacturing Practices (GMP’s)
• - Previous experience in food manufacturing and/or laboratory environmen
• - Good oral and written communication skills.
• - Ability to comprehend basic mathematical concepts such as fractions, ratios, temperature tolerances, multiplication and addition
• - Average computer skills: Microsoft Word, Outlook and Excel.
• - Ability to maintain information in a confidential manner.

Where You'll Work:

• - Works in a fast-paced manufacturing environment and exposure to potentially high noise levels, abnormal temperatures due to freezer and baking area.
