Job summary

Champion Foods LLC is seeking a production quality technician to monitor procedures and ensure reports meet quality, safety, and legal standards. You will document data for crust, toppings, and USDA specifications, and verify temperature, metal detector, and end-of-line labeling accuracy.

You’ll perform lab evaluations, bake tests, and texture analysis, calibrate equipment daily, and conduct microbiology testing while maintaining a clean lab environment.

Qualifications

• GMP knowledge or familiarity with quality systems.
• Clear verbal and written communication skills.
• Basic math concepts such as fractions and temperature tolerances.

Responsibilities

• Monitor production procedures to maintain quality, safety, and legal standards.
• Document data for the product line (crust, topping, USDA).
• Record dough temperature and ensure it is documented by the dough mixer.
• Verify metal detector status and documentation by the packer.
• Oversee end-of-line checks for product weight and labeling accuracy.
• Conduct laboratory evaluations including baking tests and texture analysis.
• Calibrate thermometer, scales and pH meter daily.
• Perform microbiology tests and collect swab samples (APC, ATC, Yeast and mold).
• Maintain cleanliness of lab and bake areas.
• Support manager with additional duties as needed.
• Monitor environmental pathogens and surface swabs.

Your Mission

Under general supervision and according to established policies and procedures, monitors all of the production procedures and parameters to ensure established quality, safety and legal standards of food products are maintained.

What You'll Do

• Checks and documents specific data corresponding to assigned product line (crust, topping, USDA.)
• Examines dough temperature for accuracy and ensures that it is recorded by the dough mixer.
• Checks and documents that the metal detector is correct and recorded by the packer.
• Monitors the end of the production line to ensure finished product weight and proper identification is printed on product shippers.
• Conducts product evaluations in the laboratory. These include: baking test and specification parameter evaluations, as well as texture analysis. Records findings on evaluation form.
• Calibrates thermometer, scales and pH meter daily.
• Perform microbiology testing for site. Collect swab samples (APC, ATC, Yeast and mold)
• Keeps lab and test bake areas clean
• Perform other duties as required by manager
• Environmental monitoring pathogens/surface swabs.

What You'll Bring

• High School Diploma or GED.
• Knowledge of Good Manufacturing Practices (GMP's)
• Previous experience in food manufacturing and/or laboratory environmen
• Good oral and written communication skills.
• Ability to comprehend basic mathematical concepts such as fractions, ratios, temperature tolerances, multiplication and addition
• Average computer skills: Microsoft Word, Outlook and Excel.
• Ability to maintain information in a confidential manner.

Where You'll Work

Works in a fast-paced manufacturing environment and exposure to potentially high noise levels, abnormal temperatures due to freezer and baking area.
