Qualifications

Responsibilities

  • Ensure accurate, efficient, high-quality output following recipes and standards.
  • Operate, clean, maintain, and troubleshoot kitchen and food processing equipment.
  • Identify and implement process improvements to enhance efficiency, quality, and consistency.
  • Support other duties as assigned by the Production Manager.

POSITION SUMMARY

The Production Specialist plays a critical role in the hands-on creation and packaging of our artisanal meat products, ensuring high-quality output that aligns with Old Major Market's commitment to excellence. This position involves working with inspected raw proteins, sausages, bacons, heat-and-eat entrees, and other food items, while maintaining a safe, clean, and efficient production environment. The role requires attention to detail, teamwork, and a proactive approach to process improvements. The Production Specialist reports to the Production Manager and works full-time, with hours typically aligned to production schedules, including potential early mornings, weekends are a rarity but could be requested if volume dictates.

JOB DESCRIPTION:
Production & Packaging Operations
  • Perform hands-on production tasks across all stages, including portioning, grinding, mixing, seasoning, linking, slicing, smoking, packaging, etc.
  • Ensure accurate, efficient, and high-quality output while adhering to recipes, specifications, and Old Major Market standards.
  • Participate in the safe use, cleaning, routine maintenance, and basic troubleshooting of kitchen and food processing equipment.
  • Identify process improvement opportunities and provide direct input to enhance efficiency, quality, and consistency in daily operations.
Food Safety, Sanitation & Workspace Maintenance
  • Strictly follow food safety protocols, including proper handling of raw proteins, temperature controls, cross-contamination prevention, and compliance with USDA, FDA, and Indiana health regulations.
  • Adhere to HACCP standards and process outlines. Work with production manager to ensure HACCP guidelines are being met daily.
  • Clean, sanitize, and organize the production space and equipment at the end of each shift (and as needed during shifts) to maintain a safe, compliant, and efficient environment.
  • Conduct regular checks on equipment functionality, report issues immediately, and support overall facility sanitation and organization.
  • Perform any additional duties as assigned by the Production Manager to support company success and operational needs.
QUALIFICATIONS AND EDUCATION REQUIREMENTS
  • Must be at least 18 years of age and eligible to work in the United States.
