Job Summary: As a Gottes Roadside Commissary Prep Cook, you will work as part of a team to prep ingredients and prepare recipes ensuring highest quality standards are met for distribution to our restaurants. This position requires knowledge of food safety, hygiene, ability to collaborate with the team and professionalism. This position requires morning availability and the ability to work weekends and holidays.

Essential Duties and Responsibilities
Food Preparation/Production
  • Prepare food according to recipe in a timely and efficient manner.
  • Wash, chop, and slice vegetables using various kitchen equipment.
  • Prepare sauces, dressings, pickled ingredients, and other food items.
  • Properly portion, bag, and label ingredients for packaging and transport following HACCP protocol.
  • Follow manager's direction to manage all aspects of the station.
  • Maintain clean and orderly workstation and equipment.
  • Monitor equipment and ensure all specialized tools are in working order.
  • Use proper rotation (FIFO), and check for ingredient quality.
  • Complete checklists and assist with overall kitchen cleanliness.
  • Adhere to food safety and sanitation guidelines.
  • Always follow Gott's procedures for preventing cross-contamination when prepping.
  • Communicate effectively with other commissary staff and management.
Other
  • Speak up if details are missed or not understood.
  • Always maintain an organized and clean work area. Observe good sanitation practices and safety procedures. Wear gloves as required.
  • Daily duties may also include but are not limited to unpacking and stocking deliveries, order fulfillment, and assigned cleaning duties.
  • Stepping in to assist other commissary prep cooks when necessary.
  • Attend required training classes and staff meetings.
  • Attend all scheduled employee meetings and where appropriate, bring suggestions for improvement.
  • Dish management.
  • Check out with manager daily before leaving your shift.
  • Other duties as assigned.

Education/Experience
  • Prior kitchen experience preferred.
Other
  • CA Food Handlers Certification required.
  • Must wear close-toed, non-slip shoes.
Knowledge, Skills & Abilities
  • Understand how to use and operate all kitchen equipment, including proper knife skills.
  • Understand cooking terms and practice FIFO.
  • Good knowledge of hot and cold food preparations.
  • Ability to work in high paced work environment with accuracy and speed.
