Job summary

Mars (New) in Chicago, IL is seeking a Product Development Scientist to lead the new product development process from concept to launch, translating consumer insights into scalable food products using solid food science principles while maintaining the existing portfolio. This role requires a Bachelor’s degree in Food Science or related field with 1–2 years of experience; advanced degrees are a plus.

Responsibilities

• Design and develop prototypes from benchtop to full-scale production.
• Collaborate with R&D sub-functions and cross-functional teams.
• Ensure raw material, finished product, and quality specifications meet requirements.
• Document results and manage knowledge across projects.
• Stay current with food science developments through trends and supplier input.
• Gain hands-on pilot plant experience and scale-up capabilities.
