Job summary

Artisanal Brewing Ventures is seeking a Prep Cook to join our kitchen team in a high-volume taproom environment. You will follow recipes, prep ingredients, and support opening/closing duties to ensure smooth service.

The role requires a minimum of 2 years in prep/line cook roles, a basic understanding of sanitation, knife skills, and the ability to thrive under pressure in a team setting. Competitive compensation and growth opportunities are offered.

• Basic understanding of or ability to learn sanitation and workplace safety regulations.
• Able to work quickly and efficiently in a fast-paced environment.

Responsibilities

• Prepares meal ingredients following a recipe under the direction of the Executive Chef or manager on duty.
• Prepares fresh produce by peeling, cutting, and portioning.
• Prepares meat by trimming, cutting, and portioning.
• Mixes sauces and condiments according to recipe.
• Maintains compliance with health, safety, and hygiene codes and standards.
• Labels and stores food while managing time-temperature logs.
• Supports planning, preparation, and execution of private events with high-quality service.

Prep Cook

Reports to: Executive Chef or Manager on Duty.

WHAT YOU'LL DO

• Prepares meal ingredients following a recipe, and as directed by the Executive Chef, or manager on duty.
• Prepares fresh produce by peeling, cutting, and portioning.
• Prepares meat by trimming, cutting, and portioning.
• Mixes or prepares condiments, dressings, and sauces according to recipe.
• Maintains compliance with applicable health, safety, food handling, and hygiene codes and standards.
• Properly labels and stores food, while managing time-temperature logs according to taproom procedures and health code.
• Assists with unloading, inspection, and storage of raw ingredients and supplies.
• Follows all opening and closing duties as outlined in ABV guides.
• Maintains a clean and sanitary workstation.
• Supports the planning, preparation, and execution of private events, ensuring high-quality service and presentation for guests.
• Performs other related duties as assigned.

WHO WE'RE LOOKING

• Minimum 2 years’ experience as a prep/line cook preferred.
• Basic understanding of or the ability to learn basic sanitation and regulations for workplace safety.
• Basic understanding of or the ability to learn food handling techniques, preparation, and cooking procedures.
• Ability to function well in a high-paced and at times stressful environment.
• Ability to work quickly and efficiently.
• Ability to work well as part of a team.
• Ability to maintain personal hygiene.
• Ability to multitask and thrive in high volume and pressure environments.
• Prolonged periods of standing and working in a kitchen.
• Exposure to extreme heat, steam, and cold present in a kitchen environment.
• Must be capable of working with knives/sharp objects.
• Must be able to lift up to 50 pounds at times.
• Manual dexterity to cut and chop foods and perform other related tasks.
