Job summary

Flatiron Provisions is seeking a Prep Cook to organize and label food items, chop ingredients, and sanitize workstations during and after service. You will assist head cooks in preparing entrées, soups, salads, and sauces while ensuring adherence to health regulations.

You will follow production sheets, maintain logs, sample items for quality, and rotate stock. The role emphasizes safety, teamwork, and timely, accurate food preparation in a fast-paced kitchen.

Qualifications

  • Two years related experience preferred.

Job Summary:

The Prep Cook is responsible for organizing and labeling food items in storage closets, performing tasks like chopping ingredients and sanitizing their workstation during and after service. The Prep Cook works under head cooks or chefs to oversee the chain of food preparation work done by line cooks. Prepare soups, salads, and sauces, assist the head cook or chef in preparing entrées, and ensure that food health and safety regulations are followed.

General Duties and Responsibilities:

  • Maintain a positive work atmosphere by acting and communicating in a manner that promotes harmony with guests, co-workers, and management.

Specific Duties and Responsibilities:

  • Prepares items requiring preparation.
  • Prepares items on production sheets following established quantities and recipes.
  • Completes and follows daily production worksheets and waste log sheets.
  • Completes all required documentation, reports, logs as required.
  • Samples and tastes all prepped items to ensure they are up to expectations.
  • Operates, cleans, and sanitizes equipment per department procedures after each use.
  • Wraps, dates, stores, and rotates all food items in designated areas according to food safety procedures.
  • Complies with federal, state, and local health and sanitation regulations and department sanitation procedures.
  • Ensure food is at appropriate temperatures and meets safety regulations.
  • Uses approved food recipes and production standards to ensure proper quality, serving temperatures and standard portion control.
  • Assists and resolves all customer concerns and inquiries.

Education and Experience:

  • At least two years related experience preferred.
  • Certified Food Protection Manager (CFPM) certification (ServSafe or similar)
