Job summary

Lobster Lab, Tiger Hospitality Group’s coastal seafood concept, is seeking a Prep Cook for the Sky Deck at Del Mar Highlands Town Center. Join a kitchen team focused on precise prep, clean stations, and consistent recipes to support the line during service.

Qualifications

• At least 1 year of kitchen experience with solid knife skills.
• Able to follow written recipes and prep lists precisely.
• Clean, organized work habits: labeling, dating, and rotation.
• Reliable, team-first attitude; punctual.
• California Food Handler Card or willingness to obtain within 30 days.
• Able to stand for full shift and lift about 50 lbs.
• Morning and daytime availability, with some weekends.

Responsibilities

• Follow recipes exactly and portion to spec
• Portion and store lobster and seafood safely: temperatures, ice, and rotation
• Label, date, and FIFO everything; keep the walk-in and dry storage organized
• Receive deliveries, check quality and quantities, and put stock away properly
• Keep the prep area clean and health-inspection-ready at all times
• Support the line and dish during rushes when needed

Nothing goes right at service if prep isn’t right. We’re looking for a prep cook who works clean, follows recipes exactly, and takes quiet pride in a walk‑in so organized the whole kitchen runs faster because of it.

About Us

Lobster Lab is Tiger Hospitality Group’s coastal seafood concept — lobster rolls, lobster grilled cheese, chowders, and seafood salads, rated the #1 lobster roll in San Diego on Yelp. After starting at the Windmill Food Hall in Carlsbad, we just opened our newest location on the Sky Deck at Del Mar Highlands Town Center, and we’re building the kitchen team that will keep the quality that earned that reputation. Our menu is short and focused — which means every single item has to be right, every single time.

About the Role

A year from now, success looks like this: your prep list is done accurately and on time every day, every batch of chowder and dressing tastes identical to the last, everything in the walk‑in is labeled, dated, and rotated, and the line never runs out of what it needs mid-service because you saw it coming.

What You’ll Do

• Work through the daily prep list: soup bases, sauces, dressings, produce, and proteins

• Portion and store lobster and seafood safely: temperatures, ice, and strict rotation
• Label, date, and FIFO everything; keep the walk‑in and dry storage organized
• Receive deliveries, check quality and quantities, and put stock away properly
• Keep the prep area clean and health‑inspection‑ready at all times
• Support the line and dish during rushes when needed

What We’re Looking For

Required

• At least 1 year of kitchen experience, with solid knife skills
• Ability to follow written recipes and prep lists precisely
• Clean, organized work habits — labeling, dating, and rotation are second nature
• A reliable, team‑first attitude; you show up on time, every time
• California Food Handler Card, or willingness to get one within 30 days of hire
• Able to stand for a full shift and lift ~50 lbs
• Morning and daytime availability, with some weekends

Nice to have

• Experience handling or breaking down seafood
• ServSafe certification
• A second language
