Qualifications

• Meat trimming and knife skills.
• Basic knowledge of meat cuts.

Responsibilities

• See deficiencies in raw materials.
• Identify the product by proper name at sight and trim all loins.
• Label/identify sub primal cuts after trimming for next step in processing.
• Know basic cuts and trims the prep table is responsible for producing (stew, roasts, PTRs, etc.).
• Some heavy lifting required.
