The role requires at least 1 year of experience, knives expertise, and the ability to read specs and perform basic math. Preference for experience with band saws, laser portion equipment, and knowledge of USDA grades.

Qualifications

• Skilled as a specialty meat cutter using knives required.
• Minimum 1 year experience as a meat cutter.
• Ability to read and understand customers’ specifications and do basic math.
• High school diploma or GED preferred.
• Experience with band saws and laser portion equipment preferred.
• Knowledge of USDA grades and standards.

Responsibilities

• Trim and customize portions of meat products using knives, band saws or other equipment.
• Count and stack portions per customer and company specs.
• Label portions with supplied product labels.
• Read and understand cut tickets and set up cutting room.
• Maintain sanitation and GMP; work in refrigerated environment 35°F–45°F.
