Job summary

Responsibilities include portioning and cutting, using knives and meat processing equipment, inspecting for quality, sorting by-products, and processing primal cuts into portions. Expect standing for long periods and lifting up to 60 lbs in a cold, wet environment.

Qualifications

• Experience in meat cutting preferred but not required
• Proficiency with knives and meat processing equipment
• Strong attention to detail and adherence to quality standards
• Ability to work in physically demanding environment

Responsibilities

• Meat Portioning and Cutting: cut carcasses into portions
• Knife Work: use knives, cleavers, saws, bandsaws for trimming
• Inspection and Quality Control: check for defects, bruises, fat
• Separation and Sorting: containerize and tag meat and by-products
• Processing: clean, trim, slice, and section carcasses into portions
• Physical Requirements: stand up to 10 hours, lift up to 60 lbs
• Work Environment: cold, wet, humid, with strong odors
• Manual Labor: use mechanical assistance as needed
