Job summary

Accor is seeking an experienced Sous Chef with a strong background in authentic Peruvian cuisine to support kitchen operations and ensure high-quality dishes. The ideal candidate will know Peruvian ingredients, techniques, and traditions while upholding hygiene and leadership standards. Experience with Opera or related systems is preferred.

Qualifications

• Extensive knowledge of Peruvian ingredients, techniques and culinary traditions.
• Strong leadership and team management in a kitchen environment.
• Commitment to food quality, hygiene and guest satisfaction.
• Experience with menu development and presentation.
• Fluency in English; additional languages are a plus.

Responsibilities

• Consistently ensure professional, friendly and proactive guest service.
• Maintain consistency in food preparation for a la carte and buffet menus.
• Conduct daily shift briefings to kitchen colleagues.
• Ensure all kitchen staff are aware of standards and expectations.
• Coordinate with Outlet Managers on guest feedback and communication.
• Oversee menu item knowledge, features and promotions.
• Interact with guests at tables and monitor operational needs.
• Ensure staffing, scheduling, and productivity guidelines are met.
• Maintain cleanliness and upkeep of all work areas and equipment.
• Follow all safety and sanitation policies in handling food and beverages.
