Position Summary

Pastry Cook III is responsible for overseeing the pastry department, ensuring quality and consistency, managing inventory, and potentially leading a team. They may also contribute to the creation of new recipes or concepts and work closely with the head pastry chef to manage production schedules and staff training. This position reports to the Pastry Chef.

Essential Job Functions/Key Job Responsibilities
  1. Maintains dessert station mise en place according to Chef’s specifications
  2. Prepares all recipes under minimal supervision as required for daily service
  3. Basic knowledge of pastry functions such as standard mixing procedures, baking time and temperatures, sanitation and proper handling of mise en place
  4. Assist Pastry Chef, Banquet Chef and Restaurant Chef in plating
  5. Maintains station cleanliness during shift
  6. Completes daily production list by shift end
  7. Cleans station at shift end
  8. Complete tasks and projects delegated by your manager and assist other departments as business volumes and staff levels demand
  9. Responsible for assisting all team members in organization of kitchen items, to include, dry goods, kitchen equipment, storage containers, cleaning supplies and proper rotation and organization of all food deliveries
  10. Other duties as assigned
Qualifications
Education & Experience Requirements
  1. Culinary school certificate or associate degree in pastry arts required
  2. 2-3 years’ experience in pastry work required
  3. A minimum of one-year experience as a pastry cook in a luxury hotel or fine dining environment is highly preferred
Knowledge, Skills & Abilities
  1. Proficient written and verbal communication English skills, Spanish a plus
  2. Knowledge of a variety of cooking techniques to include baking, broiling, grilling, sauté, roasting, blanching and more
  3. Knowledge of food handling, safety and other restaurant guidelines
  4. Knowledge of simple sauce and dressing
  5. Excellent time management skills
  6. Strong focus on precision and detail to ensure consistency and high-quality presentation of pastries and desserts.
  7. Ability to work under stressful circumstances
  8. Ability to quickly adapt to changes in processes, customer flow, environments, and tasks
  9. Ability to engage with customers in a positive and helpful manner
  10. Ability to work in collaboration with others to achieve team goals
  11. Ability to read recipes and follow instructions
Work Environment and Physical Demands
  1. Ability to reach, crouch, kneel, smell, taste, stand, walk or be on your feet for extended periods of time.
  2. Regularly work in wet, hot and humid conditions for extended periods of time and may be required to walk on slippery and uneven surfaces.
  3. Must be able to frequently lift, push or pull up to 50 lbs. individually or with assistance.
