Four Seasons Resorts Lana’i is seeking a Pastry Cook II to join our luxury kitchen team on Lanai. You will prepare and present high-quality pastries, desserts, ice creams, and chocolates, while maintaining safety standards and a clean work environment in a fast-paced luxury setting.

The ideal candidate has legal work authorization in the United States, Hawaii TB clearance, Hawaii Food Handler’s Card and ServSafe certification, and can stand for long periods and lift up to 70 lbs.

• Must possess legal work authorization in United States.
• Hawaii TB clearance is required.

• Hawaii Driver’s License preferred.

Responsibilities

• Prepare and present high-quality pastries, desserts, cakes, breads, and specialty items.
• Manage assigned pastry station with proper mise en place and production levels.
• Support Pastry Cook I operations and lead during absences as needed.
• Operate, maintain, and clean pastry equipment safely and efficiently.
• Monitor inventory, rotate stock, label and date products, maintain proper storage.
• Minimize waste and help control food costs through planning.
• Maintain a clean, sanitary work environment and adhere to safety standards.

PASTRY COOK II

The Four Seasons Resorts Lāna’i is looking for a Pastry Cook II who shares a passion for excellence and who infuses enthusiasm into everything they do. Our teams have the opportunity to shape our guest experience by providing exceptional knowledge of the Resort and exemplifying the Golden Rule in each interaction. Work authorization required.

WHAT YOU’LL DO

The Pastry Cook II prepares and presents high-quality pastries, cakes, desserts, ice creams, sorbets, chocolates, and specialty display pieces to support guest dining experiences and banquet events. This role ensures adherence to production schedules, quality standards, and food safety practices while maintaining a clean, organized work environment and continuing to develop advanced pastry and baking techniques in a fast‑paced luxury hospitality setting. Responsibilities include, but are not limited to:

• Prepare and present high-quality pastries, desserts, cakes, breads, and specialty items in accordance with recipes and presentation standards.
• Manage assigned pastry station, ensuring proper mise en place, production levels, and timely execution of orders.
• Support Pastry Cook I operations and assume leadership responsibilities during absences as needed.
• Operate, maintain, and clean pastry and kitchen equipment safely and efficiently.
• Monitor inventory, rotate stock, label and date products, and maintain proper food storage and temperature controls.
• Minimize waste and support food cost management through effective production planning and portion control.
• Maintain a clean, organized, and sanitary work environment while adhering to all food safety and quality standards.

WHAT TO BRING

• Successful candidate must possess legal work authorization in United States
• The hospitality business functions seven (7) days a week, twenty-four (24) hours a day and scheduled days and times may vary based on need. Holidays and weekends availability is required.
• Required by the Hawaii State Department to obtain a Tuberculous (TB) clearance card
• Hawaii Food Handler’s Card and ServSafe is required for this role
• Hawaii Driver’s License/Drivers Abstract is preferred
• Ability to stand for extended periods, lift up to 70 lbs, and push/pull as needed during shifts
