Four Seasons Resorts Lana’i is seeking a Pastry Cook IV who brings passion for pastry excellence and guest-focused service. You will prepare high-quality pastries, desserts, ice creams, and showpieces for guest orders and banquets.

The role emphasizes meticulous cleanliness, safety, and adherence to standards in a luxury resort setting. You must have legal work authorization for the United States, plus Hawaii health requirements (TB clearance, Food Handler’s Card, and ServSafe).

Qualifications

• Legal work authorization in United States.
• Hawaii State Department of Health TB clearance required.

Responsibilities

• Prepare pastry items to order with quality and consistency.
• Complete mise en place and set up pastry station for service.
• Independently manage the assigned pastry station during prep and service.
• Prepare items in advance to meet forecasted needs and minimize waste.
• Operate, maintain, and clean kitchen equipment.
• Label, date, and rotate items with proper storage temperatures.
• Support food cost control and minimize waste.

PASTRY COOK IV

The Four Seasons Resorts Lāna’i is looking for a Pastry Cook IV who shares a passion for excellence and who infuses enthusiasm into everything they do. Our teams have the opportunity to shape our guest experience by providing exceptional knowledge of the Resort and exemplifying the Golden Rule in each interaction. Work authorization required.

WHAT YOU’LL DO

The Pastry Cook IV prepares and presents high-quality pastries, desserts, ice creams, sorbets, chocolates, and specialty showpieces based on guest orders and banquet requirements. Ensure all items meet established production standards and quality expectations while maintaining a clean, safe, and sanitary work environment. Responsibilities include, but are not limited to:

• Prepare pastry items to order with consistent quality, following recipe cards and established production, portion, and presentation standards

• Complete mise en place and set up the assigned pastry station for service

• Independently manage the assigned station during preparation and service in an entry‑level role, building skills primarily through on‑the‑job training

• Prepare items in advance as required, ensuring production aligns with forecasted needs to minimize waste

• Operate, maintain, and properly clean kitchen equipment, including ovens, mixers, dough sheeters, proofers, steamers, food processors, and slicers

• Label, date, and rotate all food items according to policies, ensuring proper storage temperatures at all times

• Check pars for each shift and determine necessary preparation, freezer pulls, and station setup

• Support food cost control by minimizing waste, monitoring usage, identifying and reporting shortages, and ensuring unused items are properly stored, covered, labeled, and managed in accordance with established inventory and cost control procedures.

WHAT TO BRING

• Successful candidate must possess legal work authorization in United States

• The hospitality business functions seven (7) days a week, twenty-four (24) hours a day and scheduled days and times may vary based on need. Holidays and weekends availability is required.

• Required by the Hawaii State Department of Health to obtain a Tuberculous (TB) clearance card

• Hawaii Food Handler’s Card and ServSafe is required for this role

• Ability to stand for extended periods, lift up to 70 lbs, and push/pull as needed during shifts
