Job summary

Four Seasons Maui is seeking a Pastry Cook 5 to prepare pastries, desserts, and guest orders for a luxury resort in Maui. The role reports to the Pastry Management Team and requires work in a fast-paced kitchen with strict quality and safety standards.

Candidates should have High School education or culinary training, ability to operate all equipment, and basic math skills. Hawaii Food Handler Card, ServSafe within 3 months, and TB clearance are required.

Responsibilities

• Prepare pastry items of consistent quality following recipes, production and presentation standards.

• Date and rotate perishables, manage stock, and note shortages to ensure food safety and quality.

Pastry Cook 5

Preparing sweet items, pastries, cakes, cookies, muffins, fruit compotes, guest orders and banquet event orders in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment. This role is part of the Food & Beverage, reporting to the Pastry Management Team. Candidates must have valid authorization to work in the United States at the time of application.

What You Will Do

• Prepare pastry items of consistent quality following recipe cards, as well as production, portion, and presentation standards.
• Operate, maintain and properly clean kitchen equipment, including deck oven, rotating oven, gas stove, Hobart mixers, dough sheeter, bun divider, proofer, steamer, food processor, slicer.
• Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures; check pars for shift use, determine necessary preparation, freezer pull and line set up; note any out-of-stock items or possible shortages; return all food items not used to designated storage areas, being sure to cover/date all perishables.

What You Will Bring

• High School education, cooking school or culinary institute education or equivalent experience.
• Ability to operate, maintain and properly clean all equipment and utensils.
• Basic mathematics essential.
• Hawaii Food Handler Card
• ServSafe (within 3 months)
• Tuberculosis Clearance
