The Pastry Line Cook is an integral position in the execution of the restaurant and kitchen. The Pastry Line Cook in an open kitchen format contributes to the entire guest experience. The Pastry Line Cook supports the culinary management team and the other line-level culinary team members to ensure menu items are executed with excellence in the restaurant. Additionally, the Pastry Line Cook supports managing quality in all aspects of their job. Reports to: All Culinary Leadership and General Manager, with a dotted line to the Director of Operations Job Duties & Responsibilities: The Guest and The Team Model and demonstrate a professional image at all times and ensure cleanliness and good personal hygiene of others Establish guest service, satisfaction, and loyalty as a priority through personal example and follow-through When directed and necessary, handle all guest requests, comments and complaints with a sense of poise, good judgment, and urgency Needs to appropriately support and assist the service team by providing all products needed to execute a competitively superior dining experience Maintain proper storage of food and beverage product following all local, state, and federal health and civil code regulations as directed Assistance in receiving of the delivered product Assistance in keeping all areas of the restaurant clean, such as but not limited to; kitchen floors, walls, shelves, tables, removal of trash, coolers, dining room tables, dining room floors, dining room chairs, doors, windows, etc. Teach, share and coach professional pastry department standards and techniques to other line-level pastry staff Support individual and team performance through actions demonstrating strong team orientation and feedback The Property Execute menu items within specified cost parameters Prepare a wide variety of goods such as cakes, cookies, pies, bread, chocolate garnishments, etc. following traditional and modern recipes and techniques. Decorate pastries using different glazes, icing, topping, sprays, etc. to ensure the presentation will be beautiful and exciting. Execute production and plating times in a timely manner. Execute applicable processes that are vital to the daily operations, line preparation of food, execution of food during service, inventory, safety and sanitation procedures, food flavor, quality and handling, recipe adherence, HACCP, etc. Stock service supplies and alert management if any items are low or out of stock. Ensure the consistent application of culinary development standards, processes, and established methodologies Protect the intellectual properties of the brand within Charlie and Joe’s at Love Street Ensure the restaurant facility is clean and in working condition Maintain impeccable standards for a clean kitchen Model and demonstrate a passion for cooking, food flavor and quality standards Ensure the property is always secure and safe when entering the building for early morning production shifts. Ensure an open line of communication if anything on the property seems out of place, not secure or safe.
