Job Overview

Ensure proper service from the front line through quality control, training of line cooks, and maintaining sanitation standards.

Responsibilities
  • Verify all items against recipe cards and use records, ensuring efficient, quality presentation of food.
  • Monitor line setup before meal functions to ensure maximum efficiency.
  • Maintain equipment and enforce the kitchen's 'clean as you go' policy.
  • Prepare food following recipes and standards, coordinating with servers.
  • Start pre-prepared food items, avoiding overproduction.
  • Label, date, and rotate perishables as per SOP, maintaining proper temperatures.
  • Check pars, determine prep needs, and set up lines accordingly.
  • Identify out-of-stock items and potential shortages.
  • Return unused food to storage, covering and dating perishables.
  • Assist in food cost control and waste reduction per SOP.
Qualifications
Education/Formal Training

High school diploma or equivalent.

Experience

One to two years of relevant experience in a similar role.

Knowledge/Skills
  • Knowledge of cooking practices and kitchen procedures for analytical work.
Physical Demands

Must meet physical requirements, with accommodations available for disabilities. Tasks include lifting up to 70 lbs, climbing, bending, full mobility, continuous standing, hearing timers, and visual accuracy. Temperatures may vary from -10°F in freezers to over 100°F on the front line.
