Qualificações

• High school graduate or equivalent.
• Two or more years’ experience in food service role in preparing food for institutions.
• SERV Safe Certification or similar food safety certification, where required by the state.

Responsabilidades

• Plan and prepare foods according to facility policies, approved dietary guidelines and recipes/menus provided by supervisor or Dietician.
• Schedule cooking so that all foods for regular and therapeutic menus and special functions are ready at the appropriate time.
• Follow recipes and portioning procedures to prepare meats/entrees, gravies, casseroles, vegetables, soups, salads, and desserts for daily menu.
• Store and prepare food safely, maintain accurate temperature logs, ensure proper storage, rotate stock, label and date items.
• Set up steam tables and label foods for modification, ensuring attractive and standardized portions.
• Direct staff who assist in preparing and serving meals and monitor serving periods for availability.
• Take measures to preserve nutritional benefits in prepared foods.
• Record equipment and food temperatures and meal counts daily.
• Keep kitchen and service areas clean and orderly; transport trash to dumpsters.
