Indiana Packers Corporation is seeking an experienced R&D Meat Scientist to drive applied research and product development across our value-added portfolio. You will translate technical concepts into scalable products, lead plant trials, and collaborate with Operations, QA, Sales and Marketing and Regulatory to move concepts from idea to market.

This onsite role is based near IPC facilities with travel to plant sites as needed; strong expertise in pork formulation and USDA-FSIS standards is

Qualifikationen

• Bachelors in Meat Science or related field; Masters/PhD preferred.
• 5+ years hands-on meat/food product development, pork formulation preferred.
• Strong understanding of meat functionality and processing systems.
• Experience in USDA-regulated facilities; knowledge of USDA-FSIS regulations, HACCP, food-safety systems and labeling.
• Proven ability to translate results into practical, commercial solutions with good documentation.
• Experience in pork processing preferred but not required.
• Additional valued experience: cured/smoked products; shelf-life validation; DOE; data-driven decisions; clean-label formulation.

Aufgaben

• Design and execute applied R&D projects for product quality, yield, shelf-life, and process optimization.
• Develop and optimize formulations, processes, and product specs to meet requirements.
• Lead plant trials and scale-up; troubleshoot issues related to bind, emulsion, purge, texture, yield, and cook loss.
• Document formulas, specifications, protocols, and process parameters; prepare technical reports.
• Collaborate with Operations, Engineering, QA, Sales/Marketing, and Regulatory to translate needs into solutions.
• Monitor industry trends and emerging technologies to identify opportunities.
