Housing & Food Services (HFS) has an outstanding opportunity for a Nutrition and Wellness Specialist to plan, develop, evaluate, and implement programs and services to meet the nutritional needs of the student and campus population, including managing the oversight of the Dining Services food safety program related to nutrition and allergens. This position also assists in the maintenance and operation of the menu management system.

RESPONSIBILITIES

Student Education and Support (20%): Manage and oversee Medically Related Dietary Response process and support the student experience related to nutritional evaluation, guidance, and planning.

• Provide one-on-one nutritional assessments, counseling, and support through the HFS Dining Site and Student Services Office.
• Assist students who are on medically restricted diets by providing nutrition counseling relevant to available menus and offerings.
• Develop nutrition education materials and programs for individual students and groups of students.
• Work with marketing to serve as a resource of nutritional information for various media sources.
• Respond and address student and parental complaints, problems, and concerns regarding nutritional needs and provide accurate and timely follow-up.
• Serve as the preceptor to clinical nutrition and food service interns placed within the department.

Operational Support (35%): Manage and oversee operational compliance of established nutritional standards.

• Identify and set nutritional goals for dining operations.
• Consult with culinary leadership on recipe development based on established nutritional goals.
• Provide input on product selection related to compliance with established nutrition and allergen guidelines.
• Provide nutritional finesse in menu planning and recipe development to ensure compliance with guidelines and standards.
• Collaborate with campus partners to represent Dining: Public Health, Whole U, Athletics and Health & Wellness
• Conduct monthly safety meetings to proactively enforce and encourage safe food service practices.
• Participate in emergency planning and policy development.
• Develop and provide training materials on various food safety topics used during unit-level training.
• Document and update safety resources to SharePoint to ensure information is current and accessible.
• Prepare and administer internal audit controls to measure integrity of nutrition and allergen information, including unit level audits to validate compliance.
• Represent UW Dining on industry committees and professional organizations.
• Attend regional and national meetings to enhance professional development, as requested.
• Conduct and maintain compliance with Allergy Training annually with staff.
• Conduct and maintain compliance with ServSafe Manager Training to all professional staff as needed.
• Conduct unit audits for compliance with menus and recipes to maintain accuracy for ingredient usage for accurate nutritional and allergy information.

Menu Management Support (35%): Support the data entry and validation related to recipes used.

• Provide subject matter expertise of menu management system for items, recipes, menus, and nutrition.
• Provide nutritional and technical support for data entry and recipe maintenance within the menu management system.
• Data input, edit, review, and validate recipes in the menu management system as directed.
• Support the operation and maintenance of the menu management system and nutritional information.
• Support the development and implementation of web-based nutrition (Net Nutrition) and other online resources.

Nutritional Standards (10%): Oversee the development and standardization of nutritional goals.

• Support the establishment and the evaluation of nutritional program goals and priorities.
• Develop and implement UW Dining’s Nutrition Awareness Program, with the goal of promoting health and wellness in accordance with the objectives set forth by UW Dining.
• Provide nutrition expertise to students concerning health wellness and diet.

Performs related duties as required

IMPACT TO THE UNIVERSITY

This position ensures that high quality, nutritious food is available to the campus community. Providing consultation support and ensuring our menu management systems is a resource for all to use.

POSITION COMPLEXITIES

This position is responsible for providing operations and systems support related to the nutritional needs of resident students and customers. Without direct authority over unit managers, the position must use influence, data, and professional credibility via experience in retail and residential dining services to achieve compliance. Assist the Leadership Team in communicating HFS goals and objectives to the food service management team and ensure clear communication of goals and objectives to all staff within the units. Continue to enhance collaboration with other departments to help improve efficiency for UW Dining processes and solidify positive partnerships with other departments within HFS.

WORK CONDITIONS

The position works a regular Monday-Friday office schedule with the requirement to attend meetings and events that occur outside this schedule. The position will work both in office and kitchen environments. Working with and around food will occur. This position is 100% onsite.

SUPERVISION RESPONSIBILITIES

This position does not supervise other employees directly; however, there may be indirect supervision of employees for those duties wherein the position has primary reasonability. This position will have intermittent supervision responsibilities for student intern(s).

Campus Executive Chef

Requirements include:

  • Bachelor’s degree in dietetics, nutrition, or related field.
  • Registered and licensed dietitian.
  • Two (2) years of experience, which includes experience that demonstrates success:

    - Development of menu and food preparation procedures
    - Demonstrated analytical and organizational skills
    - Nutrition research and recipe and food calculations
    - Effective communication skills including giving presentations and training to technical and non-technical staff
    - Ability to work independently as well as in a team environment.
    - Mentoring / modeling customer service and professionalism in a team environment
    - Providing direct and/or indirect supervision of staff

    Equivalent education/experience will substitute for all minimum qualifications except when there are legal requirements, such as a license/certification/registration.

    Desired:

    • Working in leadership capacity within the food services/restaurant industry
    • Configuring applications and writing corresponding policies, procedures, and training materials
    • Collaborating with technical staff and end-users

    Conditions of Employment:

    • A satisfactory outcome from the employment reference check processes and education verification
    • Possession of a Washington State Food Handler’s Card
    • ServSafe Manager certification & ServSafe Instructor/Proctor certification within three months of hire and maintenance of certification thereafter
    • FARECheck College Dining Instructor Proctor certification within three months of hire and maintenance of certification thereafter
    • Maintenance of a valid Washington State Driver’s License (travel to locations across campus)
