Job summary

Sítio El Tropicano, a premier riverfront venue in San Antonio, seeks an AM Prep Cook to prepare ingredients for morning service across outlets. You will follow prep lists and recipes to ensure consistent, ready-to-use products for the culinary team.

Responsibilities include reviewing prep lists, portioning ingredients, maintaining station cleanliness, and communicating shortages. This role reports to culinary leadership and supports a cohesive kitchen operation.

Qualifications

• Prep cook or professional kitchen experience required or preferred.
• Basic knife skills and ability to follow recipes and prep lists.
• Strong organization, reliability, and attention to detail.
• Understanding of product rotation, sanitation, and allergen procedures.

Responsibilities

• Review assigned prep lists, quantities, and priorities at the start of the shift.
• Wash, cut, portion, cook, and package ingredients according to approved recipes.
• Complete production in the sequence needed for current and upcoming service.
• Check ingredients and finished items for freshness, quality, and consistency.
• Communicate shortages, delays, and quality concerns to culinary leadership.
• Maintain a clean, organized prep station and rotate ingredients properly.
• Follow allergy procedures and use knives and equipment safely.
