Overview:
A meat manager plans, directs, and controls all aspects of the meat department operation. Responsibilities include scheduling staff, overseeing ordering to support advertising and maximize profits, directing employees to meet production, sales, and merchandising objectives, and performing various tasks such as unloading trucks, cutting, trimming, dating, weighing, packaging, merchandising, and stocking products up to 6 feet high. The role involves operating equipment like meat saws, cubers, grinders, slicers, scales, and labeling machines, and using knives, cleavers, and case cutters.
The meat manager works shifts, typically up to 8 hours, and must be able to read and write, perform basic math, lift up to 100 pounds, and work in refrigerated environments with temperatures from 0 to 55 degrees. Tasks include preparing, weighing, wrapping meat items, assisting customers, making cuts to order, controlling inventory, checking in vendors, logging spoilage and sales, maintaining product freshness, stock pre-packaged meat, rotate stock, check code dates, and perform cleaning functions.
