Job summary

Halperns' Steak & Seafood in Walton, KY is seeking a Meat Cutter responsible for cleaning, cutting, and merchandising boneless beef, pork, lamb and veal. You will read specifications, ensure proper portions meet customer requirements, and uphold quality and safety standards.

The role requires precise knife skills, attention to detail, and teamwork, working within production schedules in a fast-paced environment. We offer medical, dental, vision, EFAP and profit-sharing benefits after 30 days.

Qualifications

• Must have working knowledge of production equipment.
• Able to portion all boneless cuts accurately and on time.
• Able to reduce costs by precise cutting while meeting specs.
• Strong problem-solving skills for trimming and substitutions.
• Works well under fast-paced, high-pressure conditions.
• Team player with a positive attitude.
• Clear English communication, written and verbal.
• Familiarity with Meat Buyer’s Guide specifications.

Responsibilities

• Cleans, trims, slices, and portions subprimals of beef, pork, lamb and veal.
• Inspects meat products for defects, bruises, or blemishes.
• Reads and interprets customer instructions.
• Performs quality control checks and communicates defects to supervisors.
• Separates meats and byproducts into containers and seals them.
• Uses knives, cleavers, and other equipment for cutting and trimming.
• Weights meats and labels containers.
• Follows detailed product specifications.
• Performs other duties as assigned.

Position Summary

Responsible for cleaning, cutting, portioning, and merchandising all boneless meat products.

Essential Functions

• Cleans, trims, slices, and portions subprimals of beef, pork, lamb and veal for future processing.
• Inspects meat products for defects, bruises, or blemishes.
• Accurately reads and comprehends all customer specific instructions.
• Performs Quality Control checks and communicates with supervisors and managers regarding any defects.
• Separates meats and byproducts into specified containers and seals containers.
• Uses knives, cleavers, and other equipment to perform meat cutting and trimming.
• Weighs meats and tags containers for weight and contents.
• Follows the company's detailed product specifications.
• Performs other duties as assigned.

Knowledge / Skills / Abilities

• Must have working knowledge of production equipment.
• Ability to portion all boneless cuts of meat in an accurate and timely manner.
• Ability to reduce processing costs but cutting and sizing portions accurately while continuing to meet customer specifications.
• Ability to problem solve in terms of trimming and product substitutions.
• Ability to work in a fast paced, high pressure, challenging environment
• Must be a team player and possess a positive attitude.
• Ability to effectively communicate, both written and verbally, in English.
• Must demonstrate the ability to understand the Meat Buyer’s Guide specifications as they relate to the company's internal product specifications.
