Qualifications

• Prior experience as a pizza maker or pizzaiolo.
• Ability to hand-stretch dough under time pressure.
• Understanding of dough handling and gluten development.
• Ability to stand for extended periods and lift 25–50 lbs.
• Food handler's certification or willingness to obtain one.
• Strong teamwork and communication skills.

Responsibilities

• Hand-stretch and shape pizza dough balls into consistent rounds using proper technique.
• Maintain proper dough temperature and hydration awareness to prevent tearing or over-proofing.
• Portion dough accurately using a scale to ensure consistent pizza sizes.
• Top pizzas according to standardized recipes and portion guidelines.
• Operate pizza ovens (deck, conveyor, or wood-fired) and monitor bake times/temperatures.
• Maintain a clean, organized prep and cook station in compliance with health codes.
• Rotate and manage dough proofing schedules (bulk fermentation, balling, cold/room temp proofing).
• Communicate with kitchen and front-of-house staff to manage order flow during rushes.
• Restock and prep ingredients (sauces, cheeses, toppings) as needed.
• Follow all food safety, sanitation, and allergen handling protocols.
