Job Summary

Responsible for maintaining, setting up, food production, and quality control of all meat, fish, fowl, and other food items prepared on the front-line station.

Essential Job Functions

This summary covers primary responsibilities and qualifications. The hotel operates 24/7, so shifts may vary.

  1. Prepare daily preparation lists for production.
  2. Follow recipes accurately, employing math skills.
  3. Prepare broiled and sautéed items according to recipes and guest orders, requiring transportation of heavy food products.
  4. Inspect, select, and use only high-standard food items for all menu preparations.
  5. Ensure proper storage, portion control, and quality of products.
  6. Maintain cleanliness of refrigeration, equipment, and work areas in compliance with health regulations.
  7. Maintain logs related to cooling, heating, and temperature controls.
  8. Follow all company policies, safety, and security procedures.
  9. Report unsafe conditions, accidents, injuries, property damage, or loss.
  10. Maintain a neat, clean, and well-groomed appearance as per the team member handbook.
  11. Assist other kitchen personnel as needed and perform related duties as requested by management.
Knowledge, Skills & Abilities
  • Hold a current Food Handler Card.
  • Preferably 2 years of cooking experience, especially broiler cooking.
  • Basic knowledge of food and beverage preparations, service standards, guest relations, and etiquette.
  • Knowledge of broiler and sauté cooking fundamentals.
  • Understanding of sanitation standards.
  • Ability to operate kitchen equipment like stoves, ovens, broilers, slicers, steamers, kettles.
  • Basic mathematical skills for recipes and measurements.
  • Basic English communication skills.
  • Ability to interpret product labeling instructions and operate beverage equipment.
Physical Demands
  • Lift or move goods up to 100 lbs.
  • Manual dexterity to use kitchen tools and equipment.
  • Work within extreme temperatures and confined spaces.
  • Perform frequent twisting, bending, standing, walking, and other physical activities.
