Job Title: Line Cook at Trumbauer's (New Rooftop Restaurant at the Union League of Philadelphia!)

Description: Prepare lunch and dinner for a la carte functions in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment.
Responsibilities
- Prepare food items according to consistent quality following recipe cards, as well as production, portion, and presentation standards; complete mis en place and set-up station for lunch and/or dinner service.
- Start food items that are prepared ahead of time, making sure not to prepare beyond estimated needs.
- Ideally should have experience in pizza and pasta preparation, wood-fired grill cooking.
- Fine dining experience and upscale casual restaurant experience preferred.
- Oyster bar shucker background a plus.
- Operate, maintain and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.
- Date all food containers and rotate as per policies, ensuring perishables are kept at proper temperatures; check parts to shift use, determine necessary preparation, freezer pull and line setup; note any out-of-stock items or shortages; return unused food items to storage, covering and dating perishables; assist in planning and actions to correct food cost issues; control food waste, loss, and usage per policies.
- Work harmoniously and professionally with co-workers and supervisors.
Skills and Requirements
- Cooking school or culinary institute education or equivalent experience.
- Minimum two years culinary or related work experience. Advanced culinary knowledge expected; working knowledge generally learned on-the-job.
- Ability to operate, maintain, and clean kitchen equipment proficiently; skilled in knife work and multi-tasking.
- Must be able to lift 40 lbs.
- Ability to stand for long periods.
- Bending and lifting required.
- Night and weekend work required.
