Job Title: Line Cook at Trumbauer's (New Rooftop Restaurant at the Union League of Philadelphia!)

Reports to: Executive Chef, Sous Chef

Department: Kitchen

Location: The Union League of Philadelphia (140 S Broad St, Philadelphia, PA 19102)

Description: Prepare lunch and dinner for a la carte functions in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment.

Responsibilities
  1. Prepare food items according to consistent quality following recipe cards, as well as production, portion, and presentation standards; complete mis en place and set-up station for lunch and/or dinner service.
  2. Start food items that are prepared ahead of time, making sure not to prepare beyond estimated needs.
  3. Ideally should have experience in pizza and pasta preparation, wood-fired grill cooking.
  4. Fine dining experience and upscale casual restaurant experience preferred.
  5. Oyster bar shucker background a plus.
  6. Operate, maintain and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.
  7. Date all food containers and rotate as per policies, ensuring perishables are kept at proper temperatures; check parts to shift use, determine necessary preparation, freezer pull and line setup; note any out-of-stock items or shortages; return unused food items to storage, covering and dating perishables; assist in planning and actions to correct food cost issues; control food waste, loss, and usage per policies.
  8. Work harmoniously and professionally with co-workers and supervisors.
Skills and Requirements
  1. Cooking school or culinary institute education or equivalent experience.
  2. Minimum two years culinary or related work experience. Advanced culinary knowledge expected; working knowledge generally learned on-the-job.
  3. Ability to operate, maintain, and clean kitchen equipment proficiently; skilled in knife work and multi-tasking.
  4. Must be able to lift 40 lbs.
  5. Ability to stand for long periods.
  6. Bending and lifting required.
  7. Night and weekend work required.
