Job Description: Line Cook at Highgate Hotels

Compensation Type: Hourly

Location: The position is based at the Kimpton Palladian Hotel in Belltown, Seattle, close to landmarks like Pike Place Market, the waterfront, and vibrant local venues. The hotel features a historic building with modern amenities, including a renowned seafood restaurant, a social lounge, and contemporary furnishings.

Overview:

The Line Cook is responsible for preparing all food items according to standardized recipes for various hotel dining services, maintaining high standards of quality, cleanliness, sanitation, and safety, while minimizing waste and controlling costs.

Responsibilities:
  1. Maintain cleanliness and organization of storage areas.
  2. Complete food and station preparation before service to ensure prompt guest service.
  3. Prepare and display buffet items per hotel standards.
  4. Recognize quality standards in ingredients such as vegetables, fish, dairy, and meats.
  5. Ensure a sanitary environment with proper handling and storage.
  6. Prepare food for banquets and employee cafeteria as specified.
  7. Follow hotel standard recipes and assist with specials under supervision.
  8. Break down buffets and kitchen lines, storing food and equipment properly.
  9. Support banquet food stations as scheduled.
  10. Know the location and operation of all fire extinguishing equipment.
  11. Practice safe work habits to prevent injuries.
  12. Follow all health and safety regulations regarding food and storage standards.
  13. Operate and maintain cleanliness of kitchen equipment.
  14. Maintain a 'Clean As You Go' policy.
  15. Assist with storage and rotation of food items.
  16. Manage keys responsibly under supervision.
Qualifications:
  • High School diploma or equivalent; experience in hospitality preferred.
  • Culinary experience required.
  • Flexible schedule, including long hours when necessary.
  • Ability to exert up to 50 pounds of force occasionally and 20 pounds frequently.
  • Ability to stand throughout the shift and withstand temperature variations.
  • Thorough knowledge of menus and preparation techniques.
  • Proficiency in cooking techniques such as charbroiling, poaching, deep-frying, sautéing, braising, roasting, and par-cooking.
  • Knowledge of herbs and spices and their proper use.
