Job Overview

Line Cook PM ensures proper service from the front line through quality control, training of line cooks, and ensuring proper sanitation levels.

Responsibilities

  • Check all items against recipe cards, verify use records, and ensure food is presented efficiently and with quality.
  • Monitor line setup before all meal functions for maximum efficiency.
  • Maintain equipment and enforce kitchen "clean as you go" policy.
  • Prepare food following recipes, standards, and dupe from servers.
  • Start ahead-of-time food items, avoiding over-preparation.
  • Label and rotate food containers per SOP, keeping perishables at proper temperatures.
  • Check pars, determine prep needs, and set up lines accordingly.
  • Note shortages and out-of-stock items.
  • Return unused food to storage, covering and dating perishables.
  • Assist in controlling food costs, waste, and usage per SOP.

Qualifications

  • High school diploma or equivalent.
  • One to two years of related experience.
  • Knowledge of kitchen practices and procedures.

Physical Demands

  • Lift, push, pull, and carry items up to 70 lbs.
  • Periodic climbing and bending.
  • Full mobility and ability to travel 30-50 feet.
  • Stand continuously during shifts.
  • Hear timers and communicate effectively.
  • See and understand food preparation.
