Job summary

The Marquesa Hotel, a Noble House Hotel, is seeking a Line Cook to join Café Marquesa in Key West. You will work with our team to deliver fine dining experiences, preparing and cooking menu items to specific recipes, while maintaining clean, organized stations and following sanitation guidelines.

We are an award-winning fine dining restaurant in the heart and charm of Old Town Key West. Café Marquesa features Contemporary American Cuisine with delightful Southern Cuisine influences that shine through every bite. Our chef selects the finest seafood, meats and produce to design the menu. Our team of talented chefs present innovative interpretations of classic dishes nightly. Café Marquesa also has a 6-course tasting menu available which does not disappoint.

A day in the life...

In this role, you will be working with our Cafe Marquesa team to put on a fine dining experience by preparing and cooking menu items to specific recipes, sets up and stocks station with ingredients and supplies. You will ensure the station is clean and sanitized throughout your shift.

Requirements

Previous cooking experience in a restaurant is what we are looking for, and fine dining experience is a plus.

• Providing quality food prep and production services in accordance with standards and plating guidelines
• Setting up a workstation with the necessary tools, equipment, and supplies
• Maintain and strictly adhere to sanitation and health regulations
• Prepare and produce items needed for the day by starting prep work
• Follow recipe and yield guidelines when preparing all dishes
• Notify Sous Chef of any shortages
• Report to the executive or sous chef and follow their instructions
• Ensure all dirty pots and pans are washed at the pot wash station
• Complete the closing procedures by breaking down the workstation
• Ensure that all food items are wrapped, covered, vented, and labeled/dated
• Ensures proper food handling and storage in compliance with food sanitation requirements

  Physical Requirements:

  • Must be able to exert physical effort in lifting up to 50 pounds
  • Push/Pull 50 + pounds
  • Endure various physical movements throughout the work areas
  • Remain in mobile and standing position for up to 10 hours throughout work shiftSatisfactorily communicate with guests, management and co-workers to their understanding
