Job summary

Sonesta International Hotels Corporation in Baltimore is seeking a Line Cook III to prepare all food items with attention to cleanliness, sanitation, quality, and cost control in a busy hotel kitchen.

The role involves following prep lists, cooking orders, maintaining inventory, and supporting other kitchen staff. Candidates should have basic reading/writing skills and some food prep experience; physical tasks in a kitchen are required.

Qualifications

• Basic reading, writing and math skills.
• Some food preparation experience or training preferred.
• Ability to perform physical tasks in a kitchen (lift up to 50 pounds).

Responsibilities

• Prepare and cook orders for daily operations.
• Complete all tasks, in order, on the prep list as directed by the Head Chef or other kitchen manager.
• Wash, chop, portion, and sort ingredients for daily operations.
• Measure and portion quantities of seasonings, sauces, and other cooking ingredients.
• Label, date, rotate, and stock prepared ingredients on shelves and in storage areas.
• Advise supervisor of low inventory items and assist in receiving items and inventory.
• Maintain sanitation and cleanliness standards in the kitchen area.
• Maintain a clean and organized work area and report equipment issues.
• May assist with ware washing or other kitchen duties.
• Promote teamwork and coordinate with other departments; may interact with guests.
• May assist with other duties as assigned.

What This Role Is All About

The Line Cook III prepares all food items while giving attention to cleanliness and sanitation, quality standards, taste, timeliness, and cost effectiveness with respect for fellow cooks and the hotel environment.

What You’ll Be Doing

• Prepare and cook orders for daily operations.
• Complete all tasks, in order, on the prep list as directed by the Head Chef or other kitchen manager.
• Wash, chop, portion, and sort ingredients such as fruits, vegetables, meats, and other food items in preparation for daily operations.
• Measure and portion quantities of seasonings, sauces, and other cooking ingredients according to recipes and established preparation standards.
• Label, date, rotate, and properly stock prepared ingredients and food items on easily accessible shelves and in designated storage areas.
• Advise supervisor of low inventory items; assists in receiving items and taking inventory as required.
• Maintain sanitation and cleanliness standards in the kitchen area that meet or exceed the state and local Health Board inspection and Sonesta’s requirements.
• Maintain a clean, neat and well-organized work area, including but not limited to reach-ins, walk-ins and counters. Reports all unsafe or malfunctioning equipment to supervisor.
• May assist by performing ware washer or other kitchen duties as needed.
• Promote teamwork and quality service through daily communication and coordination with other departments. Key departmental contacts include Sales and Marketing, Catering, Banquets, Outlets, Maintenance, and Guest Services. May occasionally interact directly with guests.
• May assist with other duties as assigned.

Qualifications and Requirements

Basic reading, writing and math skills. Some food preparation experience or training preferred.

This job requires ability to perform the following:

• Carrying or lifting items weighing up to 50 pounds
• Standing up and moving about the kitchen
• Handling food, objects, products and utensils
• Bending, stooping, kneeling

Other

• Communication skills are utilized a significant amount of time when interacting with the other cooks, wait staff and supervisors.
• Reading and writing abilities are utilized often when preparing meals from a recipe, when assisting in the scheduling of the kitchen staff, or when monitoring inventory.
• Mathematical skills, including basic math, percentages, quantities, and variances are used frequently.
• Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local or state government agency.
• May be required to work nights, weekends, and/or holidays.

Work Area: Main Kitchen, F&B service areas.
