Job description

Job Summary

Responsible for maintaining, setting up, food production, and quality control of all meat, fish, fowl, and other food items prepared on the front-line station.

Essential Job Functions

This description is a summary of primary responsibilities and qualifications. The job description is not intended to include all duties or qualifications that may be required now or in the future. The Hotel operates 24 hours a day and 7 days a week, so operational demands require variations in shift days, starting times, and hours worked in a week.

  • Prepares daily preparation lists for production.
  • Reads and employs math skills to follow recipes.
  • Prepares all broiled and sautéed food items according to standard recipes and guest checks, ensuring consistency; involves transportation of heavy food products.
  • Visually inspects, selects, and uses only high-standard food items in all menu preparations.
  • Checks and controls proper storage, focusing on portion control, especially for specific cuts of meat, to maintain quality.
  • Keeps refrigeration, equipment, and storage areas clean and compliant with health regulations.
  • Maintains logs for cooling, heating, and temperature control.
  • Adheres to all company policies and safety procedures.
  • Follows safety, security, and emergency procedures, including fire prevention.
  • Uses protective equipment and reports unsafe conditions, accidents, injuries, or property damage.
  • Ensures a safe work environment by following all safety protocols.
  • Maintains a neat, clean, and well-groomed appearance as per the team member handbook.
  • Performs other duties as assigned by management and assists kitchen personnel when needed.
Knowledge, Skills & Abilities
  • Hold a current Food Handler Card.
  • Preferably 2 years of cooking experience, especially with broiler cooking.
  • Basic knowledge of food and beverage preparation, service standards, and guest relations.
  • Strong understanding of broiler and sauté cooking fundamentals.
  • Knowledge of sanitation standards and operation of kitchen equipment such as stoves, ovens, slicers, etc.
  • Basic mathematical skills for recipes and portioning.
  • Basic English language skills for communication and understanding instructions.
  • Ability to operate beverage equipment like coffee makers.
Physical Demands
  • Ability to lift and move goods weighing up to 100 lbs.
  • Manual dexterity to operate kitchen tools and equipment.
  • Capability to work in extreme temperatures and confined spaces.
  • Frequent physical activities including twisting, bending, reaching, standing, walking, and visual and auditory attention.
