Job summary

La Vaquita Cheese in Wisconsin is seeking a skilled cheese maker on the first shift. Candidates must hold a Wisconsin Cheesemaker's License or Pasteurizer Operator's license or have relevant license/experience.

A $2,000 signing bonus is offered after 90 days of continuous employment. Responsibilities include cooking milk, pasteurizing, adjusting fat levels, monitoring casein-fat ratios, performing CIP, and maintaining GMP and safety standards.

Qualifications

• Follow directions and carry out instructions.
• Able to effectively work in a team environment.
• Able to legibly write entries for record keeping.
• Able to work in a fast-paced environment.
• Able to add, subtract, multiply and divide in all units, using whole numbers, fractions, and decimals.
• Must be able to read, write and speak English.

Responsibilities

• Add ingredients, adjust casein and fat level for each recipe.
• Monitor the casein-fat ratio to maximize cheese yield by adjusting fat.
• Perform CIP on HTST, vats, separators, curd and whey lines as needed and instructed.
• Collect and issue ingredients on SAP.
• Perform changes over on silos and tanks as required.
• Report food safety and quality issues to management.
• Maintain safe working conditions and compliance with health and safety regulations.
• Follow DFA GMP and all regulatory, food safety, quality and sanitation requirements.
• Other duties may be assigned as required.
