Job summary

Zuma in San Diego is seeking a Head Sommelier to curate and manage our wine program, elevating the dining experience with wine and sake expertise and exceptional service. Lead wine selection and tastings, conduct weekly inventory, develop pairings with the culinary team, and oversee service standards while training staff to deliver memorable guest experiences.

Qualifications

• Certified Sommelier or higher certification preferred.
• Previous experience as a Sommelier in a fine dining restaurant or similar upscale establishment.
• Passion for Japanese cuisine and culinary experiences.
• Ability to work flexible hours including evenings, weekends, and holidays.

Responsibilities

• Maintain and develop an extensive wine list that complements Zuma’s cuisine.
• Conduct regular tastings and evaluations of new and existing wines.
• Conduct weekly inventory assessments.
• Collaborate with the culinary team on wine pairing guidance and expertise.
• Oversee wine service standards and train staff to maintain high service quality.
• Conduct wine training and education sessions for staff.
• Support overall restaurant operations on the floor as needed.
