Qualifications

• 3+ years of supervisory experience in a USDA-regulated protein facility.
• Deep knowledge of protein fabrication, portioning, and yield optimization.
• Strong understanding of HACCP, GMPs, SSOPs, and USDA/FSIS rules.
• Experience leading production teams and coordinating frontline staff.

Responsibilities

• Direct and oversee all protein production operations from receiving to shipping.
• Review and record production documentation and monitor KPIs.
• Coordinate with planning and procurement to ensure correct cut plans and inventory.
• Maintain compliance with USDA regulations and food safety plans.
• Lead continuous improvement and mentor Production Leads and hourly staff.
