The role requires a strong background in large-scale food service, warehousing experience, and the ability to train and supervise team members in a correctional facility environment.

Qualifications

• High school diploma or equivalent certification required.
• At least three years prior experience managing a food service operation in a commercial, military, or institutional facility; plus one year of relevant undergraduate credits or technical training.
• Minimum one year warehousing experience preferred.
• Demonstrates effective personnel interactions, communication skills, and problem-solving techniques.
• Proficiency with computer systems preferred.
• Knowledge of sanitation standards for quantity food production.

Responsibilities

• Review daily menus and order food and supplies.
• Supervise all activities including handling, preparation, storage, and cleanliness.
• Ensure the serving line operates efficiently and temperatures meet established regulatory controls.
• Decide what will be discarded and what will be saved for leftovers.
• Manage detainee food service staff, train them, and inspect their performance.
• Ensure detainee and staff servers follow sanitation, safety, and portion-control rules.
