Job summary

Kimpton Hotel Monaco Seattle | Marin Restaurant in Downtown Seattle is seeking a Lead Line Cook. You will set the standard for food quality, lead the line during service, and mentor fellow cooks to ensure Marin’s high standards.

You’ll work closely with the Executive Chef to maintain consistency and craft across all stations. The role requires experience across sauté, fry, and grill, with a flexible schedule including mornings, nights, weekends, and holidays.

POSITION SUMMARY

As Lead Line Cook, you’ll set the standard for food quality, consistency, and craftsmanship on the line. You’re a skilled, hardworking cook with a passion for mentorship — someone who takes pride not only in your own station, but in helping the whole team perform at its best. You’ll guide and train fellow cooks, help run the line during service, and step in to lead the kitchen when the Executive Chef isn’t on the floor. You’ll act as an ambassador for the restaurant, be a creator of ridiculously personal experiences, and develop relationships with guests that will compel them to return.

WHAT YOU'LL DO

Leadership & Training

  • Train and mentor line cooks on proper techniques, plating, and menu execution, helping the team consistently meet Marin’s quality standards.
  • Serve as the lead cook on shift, overseeing line operations and stepping in for the Executive Chef or Sous Chef when needed.
  • Support the onboarding of new kitchen team members and reinforce proper food safety and service standards.
  • Report maintenance or repair needs to the Executive Chef and help troubleshoot issues on the line during service.

Food Preparation & Quality

  • Know and consistently apply standard portion sizes, cooking methods, and quality standards across all stations.
  • Provide excellent quality and presentation of every dish that leaves the kitchen.
  • Ensure food is produced on a timely basis and that fellow cooks are well versed in current menu items and specifications.
  • Demonstrate and confirm proper preparation and execution of each menu item, including item specs and presentation.

Kitchen Operations & Safety

  • Prevent spoilage and contamination by implementing proper sanitation practices and ensuring compliance with health regulations.
  • Stock and maintain sufficient food product levels at line stations to support a smooth service period.
  • Maintain a clean, sanitary work station area, including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection ovens, flat top ranges, and refrigeration equipment.
  • Assist in the daily cleaning of the pantry, cooking line, prep kitchen, dish area, stairs, walk-in, and prep area.
  • Follow departmental policies as well as restaurant rules and regulations as set forth in the employee handbook and by management.
  • Build and maintain strong working relationships with teammates across the kitchen and front of house.
  • Act as an ambassador for the restaurant, creating ridiculously personal experiences and guest relationships that keep them coming back.

What You Bring

  • Previous cook experience required; prior experience training or mentoring other cooks strongly preferred.
  • Proven ability to run a station and support the team during high-volume, high-pressure service.
  • Experience and proficiency across sauté station, fry station, and grill station.
  • Comfortable working at a high level of performance across all meal periods, including breakfast, lunch, dinner, and brunch.
  • Strong time management and organizational skills to keep food production running at a high level.
  • Expertise in food product, presentation, quality, and preparation, along with menu concept and design.
  • Ability to work with minimal direction or supervision, and to guide others in doing the same.
  • A highly motivated, flexible mindset with the initiative to jump in wherever needed.
  • Solid knowledge of kitchen health and safety rules.
  • Trained in knife skills and basic kitchen equipment.
  • Ability to multi-task under pressure.
  • Food Handler Certification, if applicable in your jurisdiction.
  • A flexible schedule — you’re available to work mornings, nights, holidays, and weekends.
