Job summary

The Benson Hotel in Portland, Oregon is seeking an experienced Lead Breakfast Cook to oversee our daily breakfast operation. This hands-on leadership role emphasizes organization, consistency, quality, and professional kitchen standards.

You will lead breakfast prep, maintain line efficiency, train staff, coordinate with culinary leadership and hotel operations, and ensure sanitation and timely service for restaurant, room service, and events.

Qualifications

• Two years of professional breakfast, brunch, hotel, or high-volume cooking experience preferred.
• Experience in a lead cook or supervisory role preferred.
• Ability to work efficiently during high-volume service.
• Strong kitchen organization and cleanliness practices.
• Excellent communication with culinary leadership and hotel operations.

Responsibilities

• Lead the daily preparation and execution of breakfast service.
• Prepare eggs, breakfast meats, potatoes, sauces, baked items, and other menu components according to established recipes and standards.
• Maintain consistent quality, presentation, seasoning, and portion control.
• Organize the breakfast line and ensure the kitchen is fully prepared before service.
• Provide direction and support to breakfast cooks, prep cooks, and dish staff as needed.
• Coordinate production for restaurant service, room service, banquets, and hotel events when applicable.
• Monitor product levels, communicate ordering needs, and minimize waste.
• Maintain accurate labeling, dating, rotation, cooling, and storage procedures.
• Ensure all sanitation, food-safety, and cleanliness standards are followed.
• Communicate effectively with culinary leadership and the hotel operations team.
• Assist with training and maintaining accountability within the breakfast team.
