Summary
The Kitchen Steward / Dishwasher is responsible for the overall cleanliness of kitchen areas and dishware, tableware, and service ware under the guidance of the Kitchen Steward Supervisor.

Specific Duties And Responsibilities
The work environment characteristics described here are representative of those a Team Member encounters while performing the essential functions of this job with or without reasonable accommodations.   1. Clean according to standards the following items and areas: broilers, deep fryers, grills, ovens, range hoods, ware washing machines, floors, walk-ins.
  2. Carefully rinse all dishware, tableware, and service ware for restaurants before sending them through the dish machine.
  3. Know and practice Health & Safety standards as set forth by governmental agencies.
  4. Wash hands at each possible point of contamination.
  5. Clean, deck brush, and mop all kitchen floors.
  6. Follow 3-compartment sink procedures.
  7. Perform weekly de-liming of each dish machine.
  8. Use all chemicals according to instructions and know where data sheets are located.
  9. Report any malfunctions of the dishwashing machine, including temperatures or other equipment issues.
  10. Set up, break down, and maintain all dishwashers.
  11. Empty all trash receptacles and cardboard boxes into the dumpsters.
  12. Clean and maintain all cook lines.
  13. Perform other duties as assigned by supervisors to maintain the kitchen, including cleaning ice machines, hand sinks, and refilling paper towel and soap dispensers.
  14. Ensure organization, cleanliness, and inventory of clean floor signs are in good repair.

Standards of Performance

  1. Ability to multi-task.
  2. Effective communication skills for safety.
  3. Provide good internal customer service to team members.
  4. Availability to work when needed, including weekends, holidays, and nights.

Education, Training, And Experience

  • High school diploma or equivalent preferred.
  • Customer Service or Food & Beverage experience is preferred.

Language Ability

Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.

Reasoning Ability

Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.

Certificates and Licenses

Must be able to obtain and maintain appropriate and applicable licensing.

Work Environment

The work environment is loud, with smoking in portions of the casino, which may be smoky. Candidates must endure hot and moist conditions.

Physical Demands

Employees must frequently sit, stand, walk, use hands, reach, climb, stoop, kneel, crouch, or crawl. Must be able to lift, push, and pull up to 50 lbs independently and more with assistance.
