Oxford Casino Hotel in Oxford, ME, part of Churchill Downs Incorporated, seeks a kitchen dishwasher responsible for maintaining overall cleanliness of kitchen areas and dishware under the guidance of Kitchen Supervisors.

Responsibilities include cleaning boilers, ovens, ware washing machines, floors; rinsing dishware; following 3-compartment sink procedures; reporting equipment malfunctions; and assisting the team to ensure safe, efficient kitchen operations.

Responsibilities

• Cleans according to standards the following items and areas: Broilers, deep fryers, grills, ovens, range hoods, ware washing machines, and floors and walk-ins.
• Carefully rinses all dishware, tableware, and service ware for restaurants before sending them through the dish machine.
• Knows and practices Health and Safety standards as set forth by governmental agencies.
• Washes hands at each possible point of contamination.
• Cleans, deck brushes, and mop all kitchen floors.
• Follows 3-compartment sink procedures.
• Weekly de-liming of each dish machine.
• Uses all chemicals according to use and knows where sheets are located.
• Report any malfunctions of the dishwashing machine, (including temperatures too low or too high) or any other type of equipment used.
