Position: Jr. Sous Chef – Butcher

Pay-Rate: 20.63/per hour

Job Summary:

The Butcher operation within the Broadmoor Hotel offers a variety of high-quality proteins for the Restaurant and Banquet operations. The Butcher operation within the Broadmoor Hotel assists with maintaining the Forbes Travel Guide Five-Star and AAA Five-Diamond ratings for the Hotel.

As a member of the Culinary Team, you will be responsible for preparing specific protein menu items and assisting the Head Butcher in daily responsibilities including ordering, kitchen management, execution of menu items, and managing a staff of 5-7 employees daily. This person must be able to follow the direction of the Executive Banquet Chef and Head Butcher in maintaining the highest standards of food quality, taste, and production.

Essential Duties and Responsibilities include the following and other duties may be assigned:

  • Capable of breaking down sub primal meats and seafood.
  • Assists with organization of product, equipment, and necessary paperwork.
  • Experience with Production Lists.
  • Experience with proper cooler and cart storage.
  • Experience with operating, maintaining, and cleaning necessary machinery.
  • Prepares all menu items in assigned area daily.
  • Follows portion control, presentation of food, consistency of food, and flavor as determined by the culinary department.
  • Checks coolers for proper rotation of food items to prevent spoilage.
  • Ensures adequate amount of product is on hand and informs supervisor of orders needed.
  • Takes required breaks, notifying supervisor prior to leaving station.
  • Maintains a clean, organized, and sanitary work area following safety guidelines.
  • Follows all hotel and kitchen policies and procedures.
  • Advises chef when food inventory is depleted.
  • Understands and adjusts recipes according to business levels.
  • Maintains a working knowledge of properly storing, rotating, and maintaining products.
  • Maintains ServSafe and health department standards.
  • Maintains comprehensive preparation and knife skills.
  • Checks and completes mise en place and pars to set-up the station.
  • Ensures production of food in a timely manner.
  • Prepares food so that quality, taste, and appearance are in accordance with Broadmoor standards.
  • Controls proper usage and rotation of food.
  • Alerts Chef or direct supervisor to any food quality issues that could adversely affect Broadmoor Resort culinary operations.
  • Maintains walk-in coolers and food storage areas daily.
  • Ensures workstation and all equipment are clean and sanitized prior to the change of shift.
  • Ensures outlined prep is completed in a timely manner for the next shift.
  • Makes sound judgment calls based upon principles set forth by The Broadmoor culinary management team.
  • Demonstrates responsibility and reliability.
  • Works well under pressure in a fast-paced environment.
  • Works cohesively as part of a team.
  • Focuses attention on guest needs, remaining calm and courteous.
  • Gives instructions to cooking personnel in fine points of cooking.
  • Assumes responsibility for kitchen.
  • Runs a station independently.
  • Willingness to work in a fast-paced, team-oriented environment.
  • Upholds and abides by all Broadmoor policies, procedures, and safety guidelines.
  • Other duties as assigned.

  • Applicable culinary degree and experience or at least three (3) years of related culinary experience and/or training; or equivalent combination of education and experience.
  • Must be 18 years old.
  • Occasionally required to lift/pull/push up to 50 pounds and will work in conditions that are both inside and outside at times.
  • Enthusiastic, friendly, and energetic team member who works well with others.
  • Strong interpersonal communication skills.
