Location Overview

The Cook is responsible for preparing all food items based on standardized recipes for various hotel outlets, ensuring high standards for appealing and appetizing products. The role also involves maintaining cleanliness, sanitation, safety in the kitchen, and minimizing waste to optimize costs and productivity.

Responsibilities
  • Maintain cleanliness and organization of storage areas.
  • Complete food and station preparations before opening to ensure prompt service.
  • Prepare and display buffet items according to hotel standards.
  • Recognize quality standards in ingredients such as vegetables, fish, dairy, and meat.
  • Maintain a sanitary environment, handling and storing food properly.
  • Prepare food for Banquets as per specifications.
  • Prepare and serve food for the Employee Cafeteria as directed.
  • Follow hotel standard recipes; support specials under supervision.
  • Break down buffets and kitchen lines, storing food and equipment properly after meals.
  • Support banquet food stations as scheduled.
  • Know the location and operation of all fire extinguishing equipment.
  • Practice safe work habits to prevent injuries.
  • Use Production Charts as per hotel standards.
  • Support other kitchen positions as needed.
  • Follow all health and safety regulations.
  • Operate and maintain kitchen equipment cleanliness.
  • Maintain a 'Clean As You Go' policy.
  • Assist in food storage and rotation.
  • Manage keys responsibly under supervision.
Qualifications
  • High School diploma or equivalent preferred; experience in a hotel or related field is a plus.
  • Culinary experience required.
  • Flexibility for long and variable hours.
  • Ability to exert up to 50 pounds occasionally and 20 pounds frequently.
  • Ability to stand throughout shifts.
  • Ability to withstand temperature variations.
  • Thorough knowledge of menus and preparation standards.
  • Proficiency in techniques like charbroiling, poaching, deep-frying, sautéing, braising, roasting, and par-cooking.
  • Knowledge of herbs and spices and their proper use.
