Job summary

Denali Universal Services (DUS) seeks a Head Cook to oversee daily food and housekeeping operations at a remote North Slope Alaska camp. Role includes managing staff, coordinating meals, and ensuring safety and quality in a high-volume environment.

You will work a 3/3 or 2/2 rotational schedule with 12-hour days, plus overtime. Travel between Anchorage and the site is provided. Housing and meals are included, with opportunities to work at various sites as needed.

Qualifications

• 2–3 years of experience in high-volume food production and supervision.
• Must be able to speak, read, write English fluently.

Responsibilities

• Coordinate and supervise staff.
• Plan, cook and oversee meal preparation and service.
• Ensure daily garnishing of meal service lines and salad bars.
• Conduct pre-meal walk-throughs to check cleanliness and stock.
• Lead weekly staff safety meetings.
• Train staff in supervisory, culinary, and operational skills.
• Interface with camp and admin staff to meet goals.
• Ensure uniform regulations are followed.
• Monitor inventory and place timely orders.
• Maintain HACCP and safety materials on site.
• Build strong customer relations through courteous service.
• Fill in for staff during absences.
• Be alert and work safely at all times.
• Arrange catering setups as required by client.

Job description

Under limited supervision, the Head Cook oversees and directs the day-to-day food and housekeeping services of a remote camp on the North Slope of Alaska. Employee is responsible for client relations and all aspects of food operations as well as additional responsibilities required by the company and/or client.

• Rotational Schedule: 3 weeks on/3 weeks off or 2 weeks on/2 weeks off; varies by job site
• Work shifts: 12 hours/day (40 hrs straight time + 44 hrs OT per work week).
• Travel: Flights between Anchorage and the job site are arranged and paid for by the company
• Housing & Meals: Included (free)
• Point of hire: Anchorage, AK

REQUIRED QUALIFICATIONS

• Must be at least 18 years of age
• High school diploma or equivalent
• 2-3 years of experience in high volume food production and supervision
• Valid driver's license
• Previous supervisory experience
• Proficient in Microsoft Office (specifically Word, Excel, and Outlook)
• Able to proficiently speak, read, understand, and write English
• Reliable access to a smartphone capable of running apps for scheduling,
  timekeeping (clocking in/out), shift communications, and time-off requests
• Must pass a pre-employment criminal background check, drug screen and physical requirements

DESIRED QUALIFICATIONS

• Culinary training from an accredited culinary institute or management experience in high volume institutional type operations
• Certified Professional Food Manager
• State of Alaska Food Worker Card
• Previous experience with an electronic ordering system
• Previous experience in remote camps and/or related area of experiences

ESSENTIAL FUNCTIONS

• Coordinate and supervise staff
• Plan, cook and oversee the preparation and service of quality meals
• Ensure each meal service line and salad bar are garnished on a daily basis
• Conduct pre meal walk through daily to check cleanliness, stock, and appearance
• Conduct weekly staff safety meetings
• Train and develop staff in supervisory, culinary, and operational skills
• Interact with camp and administrative staff to accomplish common goals in a timely manner
• Assure that all uniform regulations are being met
• Monitor inventory food levels and conditions; order food products, meat and supplies accurately and in a timely manner
• Assure balanced inventories through proper storage and rotation of products
• Ensure constant availability of HACCP and safety materials and equipment for camp staff, and enforce their use
• Establish and maintain good customer relations through courteous daily contact and quality professional service
• Assume temporary catering job assignments in the absence of staff members
• Ability to work in a constant state of alertness in a safe manner
• Arrange special catering function setup and execution as required by client
• Willingness to perform other duties as required
• Willingness to work at various locations as required

WORK ENVIRONMENT AND EXPECTATIONS

• Work is performed in a commercial kitchen within a remote camp
• Ability to remain on your feet for long shifts and perform repetitive physical tasks, including lifting up to 50 lbs.
• Willingness to work day or night shift.
• Must be comfortable living and working in a remote location with shared housing accommodations and communal facilities.
• Teamwork, reliability, and a positive attitude are essential
• Strict adherence to safety, hygiene, and conduct standards
