Job Description

To produce all hot and cold food items for service in the restaurant and catering functions, ensuring that all are prepared according to The Ranch at Laguna Beach standards and specifications.

Immediate Supervisor’s Title

Weekend, Mornings, Nights, Over Night, As Needed

Responsibilities
  1. Prepare food of consistent quality following The Ranch at Laguna Beach standards.
  2. Date all food containers and rotate per Standard Operating Procedures (SOP).
  3. Practice safety standards at all times.
  4. Cook orders as requested, including special requests.
  5. Start food items that are prepared ahead of time, making sure not to prepare over estimated needs.
  6. Practice sanitation standards at all times. Make sure that all perishables are being kept at the proper temperatures.
  7. Properly portion all items on assigned station.
  8. Ensure assigned station is ready for service, with all menu items.
  9. Assist in prep work of vegetables and condiments as required for the next shift.
  10. Prepare all guest orders on time including special requests.
  11. Have strong knowledge of all stations in the scheduled kitchen.
  12. Able to assist the Sous Chef with daily operations, and keep a watch on operations when the Sous Chef is absent.
  13. Complete a proper requisition ensuring all products have been ordered for the following day.
  14. Supervise other cooks and associates.
  15. Return all unused food items to designated storage areas, covering and dating all perishables.
  16. Control food waste, loss, and usage. Assist in setting up plans and actions to correct food cost problems.
  17. Able to work all stations in the designated outlet.
Qualifications And Skills
  1. Minimum lifting 30 lbs.
  2. Effective verbal communication with guests and co-workers.
  3. Pushing, pulling, bending, stooping, upward reaching.
  4. Understanding of daily culinary operations, able to assist team members before and during service.
  5. Positive relationships with other departments.
  6. Ability to follow directed instructions from a manager or supervisor.
  7. Skills in baking, broiling, sautéing, and steaming meats, fish, vegetables, and other foods.
  8. Ability to make soups, sauces, and stocks.
  9. Ability to measure and mix ingredients according to recipes.
  10. Exposure to extreme temperatures.
  11. Work until last guest orders have left the kitchen, with pay adjustment for overtime.
  12. Wear The Ranch at Laguna Beach standard uniform, including name tag and hat.
  13. Report to work on time with minimal sick calls.
  14. Prolonged standing and walking.
  15. Basic English speaking and understanding skills.
