About R&G Lounge
R&G Lounge has been a part of San Francisco's Chinatown since 1985. In December 2026, we plan to open our second location in Las Vegas, marking an important milestone for the business. As we grow, we're focused on strengthening our operations while staying true to the food, service, and traditions our guests have come to know.
We're looking for a General Manager to lead our San Francisco restaurant's business performance and work closely with the CEO. This person will own the P&L, lead the management team, improve systems and processes, and help move the business forward. We're looking for someone who understands the realities of running a busy restaurant, is comfortable with the numbers, and knows how to bring people along when things need to change.
What You'll Do
Financial Performance
- Own the restaurant's P&L and review revenue, labor, food costs, and operating expenses each week.
- Work with the CEO and CFO to understand results, address cost variances, and improve profitability.
- Track key operating metrics and turn the numbers into clear priorities for the management team.
- Work with FOH and kitchen leadership on labor planning, purchasing, and cost controls while protecting food quality and guest experience.
Lead the Management Team
- Lead and mentor the Business Operations Manager, Captains, and FOH team, with clear expectations and accountability for results.
- Run the weekly leadership meeting and report to the CEO on financial performance, operating issues, and progress on key priorities.
- Coach managers, address performance issues, and follow up to make sure decisions turn into action.
- Work closely with the Head Chef and kitchen leadership to keep front- and back-of-house aligned.
- Build trust with an established team while maintaining consistent standards and addressing problems directly.
Improve Systems and Processes
- Lead improvements to our restaurant systems, including Toast, OpenTable, Shifty, and Ninety.
- Review how work gets done today, identify what's slowing the team down, and simplify processes where possible.
- Lead system rollouts from planning and training through adoption and follow-up.
- Introduce changes at a pace the team can absorb, with clear communication and practical training.
- Develop and maintain SOPs that help managers and employees work consistently without creating unnecessary bureaucracy.
Events, Catering, and Marketing
- Oversee private events, banquets, and catering, from booking and coordination through execution.
- Look for ways to grow event business and improve the profitability and execution of each event.
- Work with the CEO and team on marketing initiatives, promotions, and local partnerships.
- Track results and adjust efforts based on what brings in business.
Restaurant Standards and Guest Experience
- Maintain standards for service, cleanliness, safety, and restaurant presentation.
- Work with the Business Operations Manager and kitchen leadership to address guest feedback and recurring service issues.
- Identify operational problems and see them through to resolution.
- Ensure the restaurant follows applicable food safety, employment, and operating requirements.
Qualifications
- At least 5 years of restaurant management experience, including 3+ years as a GM or 5+ years as AGM in a high-volume, full-service restaurant with meaningful P&L responsibility.
- Experience with a restaurant generating more than $8 million in annual revenue is strongly preferred.
- Direct P&L responsibility and a solid understanding of how to manage labor, food costs, and operating expenses.
- Experience reviewing financial results weekly and taking action when performance is off track.
- Experience in a Chinese or other Asian full-service restaurant, particularly a high-volume operation, is strongly preferred.
- Cantonese or Mandarin proficiency.
- Experience working with Chinese-speaking kitchen teams and an established workforce.
- Experience managing and mentoring managers, setting expectations, and holding people accountable.
- Experience leading a system implementation, such as POS, reservations, or scheduling, and getting employees to use it consistently.
- Strong judgment, practical problem-solving skills, and the ability to manage several priorities without losing follow-through.
- Willingness to work hands-on in a restaurant environment, including evenings, weekends, and holidays as needed.
Preferred
- Private dining, banquet, or catering experience.
- Familiarity with Toast, OpenTable, Shifty, Ninety, or similar systems.
- Experience working directly with an owner, CEO, or executive team on restaurant performance and business improvement.
What Success Looks Like
The restaurant's financial performance is clear and well-managed. Managers know what they own and follow through. Systems make daily work easier and give leadership better information.
