Acloché LLC seeks an experienced General Manager to lead a new restaurant from opening and establish its culture, systems, standards, and identity. This hands-on leadership role requires operating the restaurant like a business owner while aligning with ownership expectations.

You will oversee all daily operations, recruit and develop leadership and staff, manage labor and financials, and partner with culinary leadership to maintain consistency and guest satisfaction.

Qualifications

• Proven General Manager experience in a high-volume, polished full-service restaurant.
• New restaurant opening experience highly preferred.
• Strong understanding of food, wine, spirits, cocktails, and elevated service.
• Excellent floor presence and ability to control service during peak periods.
• Ability to recruit, train, develop, and retain a strong management and hourly team.
• Solid grasp of labor, scheduling, COGS, inventory, purchasing, and P&L performance.
• Strong understanding of reservations, pacing, and maximizing restaurant capacity.
• Exceptional organizational skills and attention to detail.
• Ability to enforce accountability and establish systems and standards.

Responsabilités

• Oversee all day-to-day restaurant operations.
• Recruit, hire, train, coach, and develop management and hourly employees.
• Maintain service, hospitality, cleanliness, and operational standards.
• Manage scheduling and labor performance.
• Monitor sales, COGS, inventory, purchasing, comps, voids, cash controls, and other financial metrics.
• Work with culinary leadership to ensure FOH/BOH consistency.
• Manage reservations, pacing, table turns, and overall restaurant flow.
• Lead management meetings, pre-shifts, training, and ongoing staff development.
• Maintain a strong management presence on the floor and with guests.
• Handle guest feedback and recovery while building relationships with regulars.
• Ensure organizational cleanliness, facility standards, and restaurant readiness.
• Identify operational problems and develop proactive solutions.
• Develop managers and identify future leaders within the organization.
• Maintain a positive, professional, accountable workplace culture.
• Represent the concept and brand in the local community, build partnerships and drive local store marketing initiatives.
