BallenIsles Country Club in Palm Beach Gardens, FL is seeking a Garde Manger Chef to lead the cold food program for daily service, banquets, and events. You will craft salads, charcuterie displays, and cold platters with high attention to detail and safety standards.

This role requires creativity, strong culinary skills, and prior garde manger leadership experience. A culinary degree and ServSafe certification are preferred, with flexibility for weekends and events.

Responsibilities

• Prepare and present high-quality cold items including salads, canapés, charcuterie, and buffets.
• Maintain garde manger station and inventory for daily service and events.
• Ensure food safety, sanitation, labeling, dating and portion control.
• Collaborate with culinary leadership to develop creative menu items and seasonal specials.
• Train culinary staff in garde manger techniques and presentation standards.
