Job summary

Management & Training Corporation (MTC) seeks a Food Service Specialist for the East Texas Treatment Facility in Henderson, TX. The role supervises inmates in the dining area, maintains a clean, safe kitchen, and assists in meal prep per pre-planned menus.

Overtime is expected and regular attendance is required. Requirements include a high school diploma or GED, 1 year of food service experience (or 18 months in custody), ServSafe certification within 12 months, and a valid driver’s license.

Qualifications

• Graduation from an accredited senior high school or equivalent or GED.
• One year full-time wage-earning correctional, commercial, or institutional food preparation or food service management experience (or 18 months custody or law enforcement experience).
• Must possess or obtain ServSafe Food Safety certification within 12 months of employment.
• Driver’s license with an acceptable driving record required.

Responsibilities

• Directly supervise inmates assigned to the dining area.
• Maintain a clean, safe, and sanitary kitchen area including prep areas, tools and equipment.
• Assist in service and preparation of facility meals per pre-planned menus.
• Oversee counts of kitchen tools and staff during shifts.
• Ensure floors and restrooms are cleaned and sanitized.
• Promote safety practices and accountability among staff and inmates.

Education

High school diploma or GED

1 year food service experience

18 months correctional custody or law enforcement experience

ServSafe Food Safety certification

Valid driver’s license
