Job description

FOOD SERVICE STAFF:
* We are seeking food service professionals who have experience and expertise in quantity food production.
* The Food Service Staff is comprised of a Food Service Manager, First Cook (head cook), Second Cook, and 18 kitchen crew members, all of whom have documented experience in mass food production.
* Position Dates: Mid-June to Late-August.

FOOD SERVICE FACILITIES:

* Cayuga operates two dining halls – one on Junior Campus & the other on Teen Campus.

* All food is prepared in the main kitchen on Junior Campus.

* Kitchen Description: 3 walk-in coolers; 1 large walk-in freezer; dry food storage area; chemical storage area; and dishwashing room.

* Kitchen Equipment: 1 large tilt skillet, 4 convention ovens, 1 flat-top grill, gas burners with ovens, 4 fryolators, 3 food warmers, 1 steamer, large & small mixers, 2 slicers, 2 ice machines, etc.

QUALIFICATIONS FOR FOOD SERVICE MANAGER:
* Minimum age of 30 years old.
* Experience in quantity food production.
* Ability to cook for 600-700 people for 3 meals a day.
* Stamina to work long days.
* Ability to manage time to ensure meals are served on time.
* Ability to lift & carry items weighing 40 lbs.
* Ability to follow direction & guidance from your supervisor.
* Energetic mature individual with high moral character & good personal hygiene.
* Strong leadership & management skills, and good teaching ability.
* Outgoing personality, and the ability to be organized & work hard.
* Preferred certifications: Serv-Safe, First aid, and CPR.
* Previous summer camp employment is preferred.

FOOD SERVICE MANAGER - RESPONSIBILITIES:
* Provide the highest quality of food service.
* Maintain standards set forth by Cayuga, Dept of Health, and the American Camping Association (ACA) regarding food preparation, serving, and storage.
* Ensure sufficient amount of food is prepared, and meals are served on time.
* Supervise cooks in their preparation of breakfast, lunch, and dinner.
* Follow the camp menu and create meal planners for each meal.
* Manage & supervise all kitchen crew members. Assign jobs listed in the Food Service Manual.
* Coordinate days-off for cooks & kitchen crew members.
* Establish ‘portion control’ guidelines for menu items.
* Enforce proper attire of kitchen staff.
* Assume cooking duties on each cook’s days-off, and assists daily when needed.
* Order all food, milk, bread, produce, and other kitchen supplies from designated purveyors.
* Maintain & control inventories.
* Oversee cleanliness of kitchen, dishwashing room, dining hall, food storage areas.
* Oversee cleanliness of all kitchen equipment.
* Supervise deliveries, and keep organized records of all invoices & shipping receipts.
